Zucchini pasties with minced meat and cheese

These fake pasties are delicious warm or cold. They store well in the refrigerator, so they can be prepared in advance and served for breakfast. But fresh and crispy always taste better.

Ingredients:

  • zucchini - 500 gr
  • sour cream - 3 tbsp. l.
  • eggs - 2 pcs
  • flour - 100 gr
  • salt pepper
  • garlic - 2 cloves
  • minced meat - 250 gr
  • onion - 1 pc.
  • salt a pinch
  • ground black pepper
  • hard cheese - 100 gr

Prepare all the ingredients and the cooking process will become much easier. Grate the zucchini on a coarse grater.

If the zucchini is large, use only the pulp. The skin must be cleaned and large seeds removed. You can take small, young vegetables.

Grate on a large cloth. If you grind it with a blender into a homogeneous puree, you will have to add more flour to the dough.

We salt the zucchini and leave it, we need it to let out the juice. After 5-10 minutes, the zucchini will release juice. Wash your hands, take a small amount of grated zucchini into your hands and squeeze out the juice. Transfer the drained vegetables to another bowl. So squeeze out all the grated vegetables.

Beat in two eggs, add three tablespoons of sour cream (it doesn’t matter what kind of sour cream you take, store-bought or homemade).

For piquancy, I add two cloves of garlic to the zucchini mixture. I peel and chop the garlic through a press. Can be finely chopped with a sharp knife.

Add ground black pepper and add one hundred grams of sifted flour. Mix everything well until smooth. The dough is ready, you can fry it.

At the same time, during the cooking process, we prepare the filling for the zucchini pasties. For this we need minced meat. You can make it yourself at home using a meat grinder, or buy it ready-made in a store or supermarket.

Place a frying pan on the fire, pour in vegetable oil, and heat it up. Peel one onion and cut it into cubes. Fry over medium heat for 1-2 minutes, stirring. Add any minced meat and mix.

Cook over low heat until done, this is about 20-25, but it all depends on the choice of meat. The chicken cooks faster.

At the end of cooking, salt the minced meat to taste and add ground black pepper. You can also add finely chopped herbs (dill, cilantro, parsley). Any dry herbs and spices, if you like (basil, suneli hops, coriander).

Pour a small amount of vegetable oil into a frying pan and heat it up. Reduce heat, add 2-3 tablespoons of zucchini mass and give it a round shape, fry on one side over low heat, turn over and fry on the other side.

Then, put 1-2 tablespoons of minced meat on one part of the zucchini pancake and spread grated hard cheese.

We put minced meat and cheese on one part, and cover with the second part on top. Using several forks, cover the cheburek. There is no need to do this with your hands as the dough is very hot.

Press down with forks to prevent the baked goods from unfolding. Then the cheese will melt, and one part will stick to the second, nothing will unfold.

Cover with a lid and cook over low heat for one minute, then turn over to the other side and cook for another 1 minute. Don't worry, all products are already ready to eat. Therefore, it is important for us that everything warms up well and the hard cheese melts.

The result is a delicious cheburek, very juicy and tender, the dough is simply super, unusual, but amazingly tasty.

You can serve it hot or cold, but I assure you that they don’t have time to cool down and are eaten immediately.

Chebureks from zucchini with minced chicken

Zucchini season is coming, we love them very much and often cook them, but zucchini pasties have become a favorite lately. They are prepared without oil, in a dry non-stick frying pan.

It turns out to be a very tasty and satisfying dish. The dough recipe is a little unusual. So try it, cook it, because the season of young zucchini is in full swing.

Ingredients:

  • 500 grams of zucchini
  • 2 eggs
  • 1.5-2 glasses of milk
  • dill greens 1-2 tbsp. l.
  • any vegetable oil
  • 1.5-2 cups flour
  • 1 tsp. baking powder (optional)

Filling:

  • 500-600 grams of chicken meat
  • 1 onion
  • salt pepper

First, let's prepare the filling. Grind the meat through a meat grinder. You can take fillet or thigh. If you take a leg or thigh, remove the bone and skin, cut the meat into pieces and grind into a meat grinder.

Peel the onion and pass it along with the meat. Add salt and pepper. Pour a little water, if you take fillet, the minced meat turns out a little dry, and to make it juicier, I pour in water.

If you do not add water, the minced meat will be crumbly and dry. Fry the meat in a frying pan lightly greased with vegetable oil. If you don't want to fry, boil the chicken and put it through a meat grinder.

Fry for about 5-10 minutes, turn off the heat, add everything, and cool. Meanwhile, while the meat was frying, prepare the zucchini dough.

Wash the vegetable, cut into cubes, add 2 eggs, salt, and grind with an immersion blender.

Add flour, milk, mix everything well with a whisk. And at the end we add greens.

The batter should be a little thicker than for regular pancakes, and spread well over the pan. Add finely chopped dill, mix everything well.

We put a frying pan on the fire, I have a non-stick coating. For the first pancake, I grease it with vegetable oil, but this is only for the first.

I take half a ladle of dough and spread it over the surface of the pan. Fry over low heat on one side.

After half a minute, place the meat on one side of the pancake and cover with the other half.

Cover with a lid and fry for half a minute on each side. Be sure to fry over low heat and cover. Make sure nothing burns; we don’t want to burn it, but fry it evenly.

Place the finished products on a plate and serve. Meanwhile, fry all the remaining chebureks.
